Mango Salsa

 

This mango salsa is the perfect light, refreshing accompaniment to my ground turkey tacos – or enjoy it with some stone-ground blue corn tortilla chips!  It’s delightful on a warm, summer evening, and is always a hit at a backyard cookout.

 

You will need:

a food processor

2 manilla mangoes

1 small onion

1/2 pasilla or poblano chili pepper

2 red roma tomatoes

1/2 tsp chili powder

1/4 tsp cayenne pepper

1/2 tsp salt

fresh cilantro leaves

juice of 1 small lime

 

Cut the pasilla or poblano chili pepper into strips and place them in a food processor along with the onion.  Process for about 15 seconds, or until sufficiently chopped.  Slice the tomato and add to the food processor along with the spices, salt, cilantro, lime juice, and the meat of the mango.  Gently pulse the food processor a few times until you achieve the desired consistency.
