Green Garlic Shrimp Scampi With Vegetables Over Brown Rice

Happy memorial day! My apologies for being behind on keeping my blog updated, but it’s been a crazy month here and I’m dealing with some personal medical issues that have temporarily kept me away. I’ll be back in action soon, but in the meantime, here’s a picture of a meal that my husband threw together the other night, quite successfully I might add – shrimp scampi, sauteed in butter with green garlic, kale and broccoli romanesco. A wonderfully light yet satisfying spring dinner. And simple – sautee the shrimp, green garlic & vegetables in cultured or clarified butter until tender (broccoli romanesco takes a bit longer than others) and serve over brown rice. Try it with your own vegetable combination. Hope you all had a wonderful holiday weekend.
